A road trip and the easiest cookies ever

Flourless peanut butter cookies
G and I are heading to Montreal this afternoon and there's nothing I like more than a road trip.
It's about a 6 hour drive from Toronto to Montreal---not so long that you dread it, but long enough to justify packing some road trip food.
I've stocked up on water, apples, junk food (I won't pretend otherwise) and some Flourless Peanut Butter cookies. The recipe calls for the addition of chocolate chips, but as you can tell I opted to leave them out.
Just this time though.
Because I love me some peanut butter and chocolate.
And let me tell you that I have never put together a batch of cookies so quickly and with such little mess to clean up afterwards. Five simple ingredients (6 with the chocolate chips) and you're good to go.
So satisfying.
They're peanutty without being overly rich and they're perfectly moist despite the complete lack of butter.
It's like magic.
So, I've got cookies in hand, the GPS is in it's place on the dashboard and the Ipod is fully loaded. I'm ready to hit the road.

Flourless Peanut Butter and Chocolate Chip cookies from Epicurious
If you've got a perfect peanut butter cookie recipe already, that's great. But I am always happy to find recipes that give good results for minimal effort. This is the kind of recipe you keep on hand in case of emergency. Sometimes an impending road trip (or a cookie craving) just doesn't want to wait for the butter to come to room temperature.

Since I know you to be a fan of creamy peanut butter, did you use that instead of the chunky called for? And was it the healthy kind, or the secret stash of G's? These are things inquiring minds require, as these cookies look too good to pass up.

Tara, you know me too well! But no, I stuck to the recipe which is why I didn't mention any changes. I used chunky Skippy pb--I don't think all natural pb would work -I think some of the reviewers (at epicurious) tried it and it didn't work out all that well.
Flourless AND butterless? Is such a thing molecularly possible?
I will have to try these. I am not loyal to any of my pb cookie recipes.

I'm doing a road trip myself in July in the USA (New England). But I'm still doubting to drive a little further and go to Canada. Do you recommend going to Toronto and Montreal? Can you help a Dutch girl out?

Even easier peanut butter cookies: 1C peanut butter (any kind), 1C sugar of choice, 1 egg
They are dense and mildly crumbly but wonderful.

Cindy, it seems that it is possible, strangely enough. We gobbled up the whole batch, every single last molecule. ;)
Kat, definitely give them a try, I swear it takes no time at all.
Anya, these cookies are so ridiculously easy and it makes them taste that much better. And I think maybe adding chocolate chips would make them taste even better than that.
Maaike, hmm, well that's a tough one. I think both are worth a visit--I would say Montreal is definitely prettier and because it is smaller you might not feel as overwhelmed as you would when visiting Toronto, especially if you only have a limited time.
Cindy, hmm, well the only thing you've left out is the baking soda and vanilla but I'm glad to hear that that works too!
Chris, you know I did intend to have some- I had read about a place that apparently has some stellar poutine, but I never made it there after all. All the more reason to make another trip one of these days though!

We made these cookies (with chocolate chips) this weekend and they were great! We all loved them (a little too much). They're already gone. BTW-I used creamy natural peanut butter and they turned out fine. Thanks for sharing.

I don't actually like peanut butter cookies, generally speaking, but a little chocolate these might be up my alley. Hope you guys have fun:-)
