Chicken pot pie in summer? Oh no you didn't.. Oh yes I did.

How old school was I last night, whipping up a chicken pot pie. I don't even eat chicken pot pie let alone bake them from scratch. I couldn't even tell you what prompted me to make one. Considering my lack of experience, I took the easiest route possible and followed a recipe called Easy Chicken Pot Pie.
How lazy am I? Did I just lose my foodie club membership? Is there even a club because I think someone forgot to invite me.
And I know what else you're thinking. Chicken pot pie doesn't seem like a summer dish. I mean if it isn't green and leafy and easy on the muffin top it just doesn't work, right?
But people, it seems that it is monsoon season here in England. I did not realize that my umbrella and I would become so close. I swear, it rains when I wake up, it rains when I'm eating my lunch and oh surprise, it is raining by the time I go to bed.
Help.
Send sun.
Or a new umbrella at the very least.
I mean, you know it's rainy when those umbrellas that attach to your head start seeming like a good idea.

I rode my bike the other morning with a pair of gloves on.
So perhaps now you understand how chicken pot pie fits right in to my current reality.
And I know you're looking at that picture and thinking I've got a whole chicken under there. But I promise you that is only a wee tiny ramekin peaking out from under that golden top. Perhaps I was a bit heavy handed with the puff pastry.
But G says there is no such thing as too much puff pastry.
He is quite the philosopher.
The recipe was simple and it hit the spot. I figure that for a first timer, it was a good start. One day I will make it again with a more contemporary variation, unless it's raining (which is highly likely) and I need some comfort food, then I might just stick to it old school.

Because I can never follow a recipe exactly:
I substituted celery for carrots
I used onion instead of shallot
I added dried thyme because I wanted to see some herbs in the mix. (the recipe has you remove the bouquet garni)

Okay, I've gotta say it. That surely is some prettily golden puff! And really, only you could make an old-school, stodgy pot pie look so very fresh.

That looks like such a comforting dish, Michele. I found myself grabbing my winter coat this morning (I cycle as well and it was cold), switched on the heating in my office as soon as I arrived, and I'm having soup for lunch (and probably for dinner as well).
It looks so professional, but with the balmy weather we have today in Japan, please freeze my pot pie :)
That sure is a mighty fine looking pot pie! I would have one anyday especially with the weather in sydney. What is with all this rain....

Tara, I'm glad you noticed the puff--I was quite pleased with it myself! And I'm chuffed that you think I can make stodgy look fresh, if only because it's fun to say stodgy ;)
Inne, well it seems we are similarly suffering, and soup seems like a good remedy too. What is with these British summers? I'm hoping July will be better..

Zarah Maria, the new rule is that whenever it's raining, chicken pot pie MUST be on the menu. Either that or something with lots of cheese and pasta. Either one will work I think ;)
I bet you did not know that I LOVE chicken pot pie, but sadly I am no cook. I might give this recipie a go because I am guessing OMO would love it as well!
mmmmm yummy! i have fond memories of chicken pot pie. brings back my times in the uni residence where i was heating up the pre-made frozen stuff. i hate to admit it but even those were pretty good.
but homemade ones...well, those are in a class themselves! :) i just need to wait for this heat wave to go away before i go and bake one.
O's mom, hey! I did not know that you were such a pan of the CP pie. (let's call it that from now on ok? it makes me laugh). Well I say you should try this recipe, it was pretty easy. It helps if you can find really good puff pastry, but Im sure Pres Choice must have some good stuff! Let me know if you try to make your own cp pie, yeah?
Chris, well in uni anything that wasn't served at the uni cafeteria seemed to taste like heaven anyway, so I can see how your frozen pot pies were a favoured indulgence! I did use to eat something kind of like a frozen pot pie but it was filled with broccoli and cheese--and I still have fond memories of those!
Chicken pot pie is not a feat I've take on yet. Though on a cold winter day it does sound good. The rain here in Texas made me crave soup this week and by golly I had it. So go on make your pie!

Jerry, I was actually surprised at how quick and easy this one was (the name of the recipe did not deceive!) I think it will definitely be something I will make again in the colder months--which could very well mean July, with the summer we've been having!
Andreea, I think summer did forget us and I'm feeling a little bit short changed because of it! Although I do take some comfort when my family and friends in Toronto remind me how hot and stuffy their summer is..
After reading this post, I am so making chicken pot pie this weekend, not least because here in Vancouver we're having the same weather you are. We call it June-uary. Bleh.

Doppelganger, oh you gave me a chuckle. Imagine if your last name was actually Ganger, then your daughter would be Smenita Ganger. I think it's catchy, but in a viral sort of way. Good luck with the cp pie--I think I'll be moving on to hearty stews for July. This summer really sucks.
