Curing a cold with wild mushroom soup


Wild Mushroom Soup

A couple of weeks ago I caught a rather nasty cold. With my boyfriend away on business, there I was, in our apartment, sick and alone. And well, just a little bit grumpy.

There are certain things that I crave when I'm sick. First and foremost, I crave dry toast and flat gingerale, a combination that my mother used to feed my brother and I when we were sick as children. No, it wasn't particularly tasty but it was much better than that cough syrup that sent us running to hide under the bed.

Of course, having our mother serve the dry toast and gingerale to us in bed was part of the cure. But with my mother an ocean away in Canada, the idea of it had lost much of its appeal.

My fallback feel-good-food, since I first left home at the age of 18, has always been a can of Campbell's Cream of Mushroom soup. I'm a woman of refined tastes, clearly. And I will even go so far as to admit that I usually just made it with water, instead of milk, as was instructed on the label.
Here's where I pause for you to say "EW" and then wonder why I would do such a thing.
Well, let's just say its another one of my strange quirks. I like to pretend that it's charming. But let's move on.

I'm sure there is a can of Campbell's Cream of Mushroom soup somewhere in Paris, but with my head and chest congested and the rest of me wanting to remain firmly planted in bed, I certainly did not want to have to go looking for it. So the days passed, my health improved, but I still had mushroom soup on the brain.



Trips to the market did nothing to curb my craving, as mushrooms of all kinds spilled from the vendors stalls. I'd never made my own mushroom soup before, and there was a little devil on my shoulder telling me to just give it a go. Nowadays, I have 2 names for this little devil that urges me to be more adventurous with my cooking, and to step out of my well-established box. Sometimes, this little devil that whispers in my ear goes by the name of Tara, and at other times, Melissa.

I found a recipe from my old standby, Williams-Sonoma, that seemed relatively easy. I came home with more mushrooms that day than I had ever bought at one time in my whole entire life. It was a little bit frightening, I admit. But the soup turned out wonderfully and I think that my Campbell's cravings may just be a thing of the past.

The base of this recipe is made with button mushrooms, so don't be fooled by the picture above. It's really nothing more than a gratuitous mushroom shot. These ones, which are called Girolles, a type of Chanterelle, were sauteed and added in afterwards, but they could just as easily be
replaced with your own favourite wild mushroom or left out altogether. (at which point you would have to, in good conscience, rename it simply "Mushroom Soup")

Dry toast and flat gingerale? I think it does sound beter than the cough syrup. Now, why didn't they figure that out in my household?

Haha! The names you mentioned sound angelic, actually. LOL! ;-)

Your soup looks good enough to cure any ailments. I'm inspired and will save the recipe for when it gets colder. Glad to read that you were able to make your own soup from scratch (thanks to the angel(s) on your shoulder, hehe!)

Mmmm...sounds delicious. I'm glad you're no longer sick and were able to enjoy eating (and making) such an amazing meal for yourself! I know I always want someone to take care of me when I'm sick!

I make chicken soup and freeze so that when I am sick case can just re heat it for me ;) lol

Not to sure about the campbells.. but this soup FAB!!!! I wish we could get awesome mushrooms like this! *sob*

Funny, I need Campbells Tomato soup and chocolate ice cream when I'm sick.
You should have called me.....I keep a stock of Campbells soup in my pantry JUST for those occasions (cream of mushroom, included).
(actually, I'm sure your homemade soup was better for you, anyway!)

Ooh, you've discovered the joys of homemade mushroom soup! I used to think I hated mushroom soup because all I'd had was the Campbells kind, and then one day I made my own, and well, the rest is history. I usually make a recipe that looks an awful lot like that one from Williams-Sonoma but sans the wild mushrooms, using porcinis for flavor and a splash of Marsala when I have some around. It's really heavenly, isn't it? No need to wait for sickness to enjoy something this good ;)

Oh Michele, yet another reason to like you. I too am a lover of Campbell's C.o.M. but, now sit down before you read this, I like to mix it still condensed into egg noodles for a very unrefined side dish.

Like you, I've been trying my hand at replacing Campbells. I make a pretty good mushroom sauce now but I'm not sure I've ever made mushroom soup. Next week I'll give this a go.

Hi Paz, yes dry toast and flat gingerale can have its appeal when nothing else wants to stay down in your belly. But it always tastes better when mom has a hand in it. And if you like mushroom soup, give this recipe a try, it was fairly easy!

Hi Michelle, being alone when you're sick is definitely the worst thing. No one to feel sorry for you and cater to your every whim. But perhaps the fact I was alone caused my recovery time to come much quicker than usual.. :)

Hi Clare, you are always thinking ahead arent you! If I had a freezer bigger than a shoebox then I would probably do the same. Well, no thats a lie, because Im still not very good at planning ahead anyway :)

Hi Melissa, oh how I wish my mom had fed us chocolate ice cream when we were sick! Im glad to hear you are well stocked with Campbells, though dont be surprised one day to find a red nosed, sniffling blogger standing on your doorstep one day begging for a can :)

Hi Melissa, you hated the campbells cream of mushroom? what? Blasphemy! :) But you're right, the homemade version is amazing, and I will definitely be making it on a regular basis, especially because then I can make it as chunky as I want it. Well, of course only when G is away, since he hates mushrooms!

Hi Amylou, well as my mom always says, there are so many reasons to like me. But then again, she was always my biggest fan. But see with every post I am more and more convinced that you and I could have the best dinner party ever with all of our "charming" food preferences. In fact, I used to make mushroom sauce for my rice with still condensed cream of mushroom soup, because once you heat it up, it de-blobs significantly, but I know that you know that. Kindred spirits? Uh-huh, I think SO.

Yay, do I get little devil horns too? I would look terribly cute in horns, I'll have you know.
As for the cream of mushroom soup à la Campbells, S has been sick this week and has eaten two full cans of the oh-so-chic ready to serve variety (called Campbell's Classics or something, and promoted as "creamier than ever before). Is it terrible that I sort of hope he still has the sniffles this weekend, just so I can convert him to the joys of your soup?

That home made soup looks good and the selection of mushrooms are fantastic.

I confess that I love Cream of Mushroom and Tomato too. I indulge in it once in a while and even cook a dish with chunks of chicken, fresh mushrooms and the cream of mushroom as a sauce. It goes wonderfully with some rice.

Hi Tara, of course you get devil horns! And a creamier version of my c of m would certainly take the sickness blues away. Im sure S would love some homemade soup, in fact I'm making it again tonight.. But this time its not because of illness, its just the cooler weather that is making me crave the warmth of homemade soup!

Hi Boo, it seems that everyone has a secret love of Campbells! I've been known to eat c of m with rice as well.. I think i even lived on that during my university years. Actually, I think I even liked cream of chicken, which is a bit suspect :)

Hi Sam, it is definitely something to adjust to! Generally my boyfriend does a good job of it, but it was my bad luck to fall ill while he was away.. I'll have to plan that better next time to ensure proper pampering ;)

My mom used to put rice in chicken broth -- it's best if it's really salty! (Yes, that means the big brand kinds and not the healthy organic stuff.) I can't wait to try your mushroom soup -- I'm making corn chowder on Wednesday and looking for a good clam chowder recipe to try over the weekend, and now I know what I'm going to make next week!

Hi Michele - this looks absolutely delicious, I had so many fresh wild mushrooms in France last week, you can imagine how happy I was... I can hardly find those in here, even though you're lucky enough to find some, they are ridiculously expensive!
