It's not about the eggs, it's about the pan.. and other things..



I will confess. This past week I have been what some may call rather uninspired in my cooking. I am addicted to my new non-stick pan and I can't stop making eggs.
Omelets, frittatas, and the somewhat creative version pictured above which can only be called an Omelata. For those who might not know the difference:
Omelet: filling folded inside
Frittata: filling mixed into eggs, not folded.
Omelata: Michele meant to make an omelet but goofed.

In any case, you've already read about my omelets lately, so I don't need to go there again. The real story here is my new pan.

On the weekend I made my first perfect over easy eggs, I felt like the queen of my own diner. I served them up for our sunday morning breakfast with pride and yes, a little bit of awe. Oh non-stick pan, where have you been all my life?

I foresee a future where french toast and pancakes turn out perfectly, with not a single speck left to scrub from the pan. In my defense, sometimes I get it right, even without the non-stick pan. But yes, I do often struggle. I know there's some magical formula that advises a hot pan, cold oil or cold pan, hot oil, that should prevent my foods from sticking in a regular pan. But for some reason I can never get it right. Perhaps I should have a note posted above my stove to remind me. But wait, I don't need to anymore. Because I have a BEAUTIFUL NEW NON-STICK PAN!

Aside from that, everything else in my life, technologically speaking, seems to have broken down on me in the space of 3 short weeks. I am almost tempted to think that I am cursed as of late. I won't even get into the details but I will say that I am yet again waiting for another part to come through the mail. Waiting, always waiting.

If one more thing breaks.. well, I'll just be really upset.

But the good news is, we think we have finally secured an apartment in Paris, where we will be moving in August. I can't even express how excited I am. The cheese, oh the beautiful cheese that awaits me.

Hi Michele,
I couldn't agree more, non-stick pans are a MUST for some dishes - even if some cooking pros might raise their eyebrows ;)
Seems like your planning to explore all parts of europe, the only question is, if there's any possibility to move further up the culinary ladder after Paris... In case you're planning on a third trip to Munich before you leave for France, just let me know :)

I definitely intend to continue blogging. In fact I may have to start a second blog for all things not related to cooking that I discover in Paris!

Hi Nicky,
Well those fussy pros can raise their eyebrows all they want and I will continue to enjoy my perfect eggs!
As for the culinary ladder, good question. Perhaps next a move to Brussels to learn the art of moules et frites. :)
And I will definitely let you know if we make it to Munich again!

It's mean, but it's smiling :) And yes, that one was darn good. My favourite omelet lately has been to add diced roasted red pepper and crumbled feta cheese, cut fresh from a big block. The best feta I've ever had in my life!

Hi Melissa,
Well I am thrilled to bits, I will barely be able to stand waiting over the next 2 months. It's absolutely a dream come true! Our apt, assuming all goes well, is in the 3rd, in the area known as Old Paris. We will stay there 3 months and then find something more permanent, once we know the city and know where we want to live. Our stay in Paris is currently indefinite, for as long or short as we want, thanks to G's job which gives us great flexibility right now to be wherever we want.

The apartment is only a one bedroom but it does have a big couch in the living room! :)

I am positively green with envy. Paris!!! what an adventure for you. I want to hear all about it! BTW, we bought paint for our living room the other day and the colour was called Oswego Tea!

So many things to grin about! A a new logo, new pan, a new city ... and finally a new apartment! Congrats to you! I'm always terribly excited when there is one new thing in my life, you must be bursting at the seams. The best of luck to you both, and I cannot express the anticipation with which I await your first post in your new home!

thank you for your felicitations! I am definitely excited. And I even did finally manage to cook something out of my new cookbook, which I will post soon, as soon as I get my "real" computer fixed once and for all. :)

Ohh - I can't wait to see what you've made, and to read the retelling of the experience! The French Laundry book is absolutely gorgeous, but somewhat daunting, I admire your effort already!
