Chicken wings with chiles and lime

Sometimes a girl just wants some good old fashioned chicken wings. And I’m not in any suggesting that these cannot be found in Heidelberg. There are 3 main Irish pubs here (that I have found) and each of them serves up their version of the perfect chicken wing. Well truth be told, I’m not sure that any of them are really aiming for perfect. But that's neither here nor there.

If you’re out with someone you are comfortable with, there is nothing better than digging in to a steaming hot pile of chicken wings, sauce on your face and your hands and, of course, chicken stuck in your teeth for the rest of the evening until you can get home to your much needed dental floss. Clearly, it’s not the optimal choice of a meal for a first date.

And sometimes, a girl not only just wants chicken wings, sometimes a girl wants her chicken wings in the comfort of her own home. Ok, I'm not just talking about any random girl here. Yes, it’s all about me. A face full of sauce, chicken bits stuck in my hair, it makes no matter, because I am at home. Well, it would matter if my boyfriend were here, but he’s away on business again, so I can be as messy as I want, and no one is the wiser. Well, until now.

I happened to spot some appealingly meaty wings recently at the market, and I just couldn’t say no. After some lazy searches on the internet for a not-too-complicated recipe, I found one. It was so simple, I knew my search was over. And, it called for the use of a grill pan, and I will happily use my grill pan any chance I can get. Although, I will admit that it did sound like an unusual way to cook wings. But who was I to argue, I’d never made them before.

Let me say, that I was actually very satisfied with my first homemade chicken wing experiment. The flavour of the marinade on the wings was very flavourful and light. I’m still a little undecided on whether the grill pan is the best tool to cook them, as a lot of chicken parts remained untouched by the grill pan because of their odd and uneven shapes. I would have preferred to have an all over browning on the wings, which I could not achieve using my grill pan alone. Pasty white chicken bits are not particularly enticing. Nonetheless, they were still quite tasty dipped in some Thai sweet chili sauce, which has been a topic of much conversation lately between another charming Canadian food blogger and I.

Variations: I used a red chili instead of jalapenos. I have yet to find a jalapeno in Heidelberg so sometimes a girl just has to make do. Recipe is posted below!




Chicken Wings with Chiles and Lime (from cooking.com)

1/2 cup fresh lime juice
4 cloves garlic, crushed
4 teaspoons grated fresh ginger
3 jalapeno chiles, seeded and finely chopped
2 pounds chicken wings


METHOD

Combine the lime juice, garlic, ginger, and chiles in a glass or non reactive metal bowl. Add the chicken and turn to coat evenly. Cover and refrigerate for at least 1 hour and up to 4 hours, turning occasionally. Remove from the refrigerator and let stand at room temperature for 20 minutes.

Preheat a grill pan over medium heat until very hot. Add the chicken and grill for about 20 minutes, turning occasionally, until cooked through and firm. Serve immediately.

Oh wings! A personal passion - if the aforementioned burnout and a bit of sickness hadn't sidelined me earlier this week, we'd planned a meal of ribs and wings at our favourite local establishment! I love the lightness of these wings, a nice change from the sticky sweetness of saucy wings, or the astringent heat of Buffalo style. I'm sure the chili sauce was the perfect accompaniment, but I'm a tad biased. So what's the verdict? Saucy or light or Buffalo? Dusted or plain? Fried or baked? As you can tell, I take my wings VERY seriously.

By the way, great photos! Your last few have taken on a very chic, very graphic quality!

Hey thanks for the compliments on the photos! I've been applying myself as they say :) And the new tripod helps too!
You know, I definitely a buffalo girl. I dont like super saucy wings, it's hard to get a good grip. And that's important! Sometimes I like fried, but more often than not they're too greasy. So, in conclusion, (as we said back in our grade school essays), I like lightly sauced, hot/spicy and baked! But I did really enjoy the flavour of these ones. I will definitely try them again but perhaps I will try baking/roasting them to brown them more evenly.

I'm usually a roast girl myself (actually, our local wing place calls theirs roasters). Blast the heck out of them in a hot oven and get them cripsy all over - that's the way I like them! Enough sauce for taste, but not enough that they are drowning in a pool of it. Again, I really shouldn't be this obsessive about food.

I'm with Tara - those photos just keep getting better and better. Did you take the photos in your new banner as well? Very impressive. Your wing recipe sounds great, though I can see where a grill pan might be an odd choice of cooking vehicle for something so irregularly shaped. Do you guys have a barbecue? I love barbecued wings that have lots of spicy sticky sauce charred onto them!

Hi Melissa, yes I did take the photos in my banner. Although the 2 black and white ones I took last summer. The other two were recent. Although I have to say that it was your comment on your blog the other day that you take 30 or 40 shots and play with exposures that gave me renewed inspiration. Sometimes you admire someone's blog and you wish you could be so talented! but you reminded me that you have to work hard to get the results you want. So that has helped me a great deal with getting me back on track and feeling good about the pics Im posting again. So truthfully and honestly: thank you!
And no, we dont have a bbq! We dont even have a yard or a balcony. Its my first time ever living in an apartment without at least a balcony! Ive never had homemade wings on a real bbq, but they sound so so good :)

*blushing* gee, well, you're welcome! but i don't think you have anything to feel envious about - your photos are stunning. one thing i love to do to give myself new inspiration is carefully scrutinize photographs in magazines, trying to work out how they got certain effects. two british magazines that i buy for the quality of their photos as much as the food are delicious and food&travel (both linked from my sidebar). maybe if your boyfriend finds himself in england again he could hunt down copies for you?

I do that too! Although I also regularly browse through the food sections of stock photography sites. Foodpix.com is my favourite although they've recently changed the layout and its not as easy to browse as it used to be. Funny you mention Delicious, because last time he was in England he called me on his cell phone from a magazine stand in the airport and asked me what I wanted. Of course I said Delicious and he laughed at the name.. :)
But my weakness of late has been my impatience and expecting to get a good shot after one or two attempts. Then I get frustrated and cant figure out why Im not happy with my pictures. But you snapped me out of it. (no pun intended, but boy it works doesnt it!)

I think I know the mewing noise you mean, my cat used to do it to! it was very strange, and only when she saw birds.

Yep only when he sees a bird.. :) I have read that it is an "international" cat noise in an animal behaviour text.

I like the way his tail shakes when he does it... sigh
